Oven Dried Carrot Chips & Homemade Sour Cream Aioli

Still riding the healthy wave here on Velvet & Vinegar, especially in terms of snacking. Almost everyone of us does it, besides the fact that a lot of nutritionists even recommend to snack on a daily basis. The problem isnt`t that we snack, it`s what we choose to do so. Results to be way more comfortable to just go for something available within the shortest amount of time and distance, mostly it won`t be something extremely healthy, unless you`re totally superhuman or blessed with a lot of discipline. Well I`m neither one of that, as well as the majority of you as I suppose. 

Now let`s think about the following situation, if you already have a snack right by your side and it turns out to be healthy. Would you go out and buy yourself another snack, that on top of all would be something unhealthy? No you wouldn`t. Why buy another snack if you already have one right next to you? 
Ok, I assume you got it,now here`s the big secret about preparing your own homemade snacks. Yes you heard right, there`s only one secret, which is preparing your snacks in advance, because if you feel the urge to snack, you want to do it right away, no way you`re going to stand in the kitchen for more than fifteen minutes at this moment. Problem solved if you prepare them on your day off. I would recommend to do one big bunch or different snacks for the coming week, like that you can assure to have a few snacks on hand when needed.

Spicy Oven Dried Carrot Chips & Sour Cream Aioli

How do you feel about carrots? Ok, let me question the other way around, how do you feel about chips? Right, their awesome, but they mostly aren`t quite on the healthy side. How do would you feel about healthy chips? Bingo! Now I got your attention. And here`s where the carrots come in, they`re healthy, loaded with vitamins and antioxidants, and you can process them into chips. Like spicy chips.....


ingredients oven dried carrot chips

What you need (for 1-2 servings, approximately 50 to 70g chips):

carrot chips:
  • 400g carrots
  • salt, used Fleur de Sel
  • black pepper, freshly grounded
  • cayenne pepper
  • paprika, grounded
  • yellow curry powder
sour cream aioli:
  • 2 garlic cloves
  • 1 to 2 tablespoons olive oil
  • 180g sour cream
  • salt, again used Fleur de Sel
  • black pepper, freshly ground
  • a pinch of paprika, ground
  • mortar & pestle
preparation oven dried carrot chips

Preparation:

carrot chips:
  • preheat the oven at 250° Celsius
  • wash and peel the carrots
  • cut off the ends, thinly slice the carrots, make sure their sliced approximately at the same thickness, like that they`ll cook more evenly
  • cover a baking tin with parchment paper
  • cover parchment paper with salt, black pepper, cayenne pepper, paprika and curry
  • arrange your carrot slices on the parchment paper
  • bake for 30 to 40 minutes at 200° Celsius. After baking for approximately 20 minutes make sure to constantly check your chips
  • take out of the oven and let cool down
  • store at room temperature in an airtight container or bag or just serve them right away after cooling down
sour cream aioli:
  • peel garlic, cut into little pieces
  • ground garlic into a paste using mortar & pestle
  • slowly add olive oil, whilst constantly stirring
  • pour sour cream into a bowl
  • add olive oil and garlic mixture, mix well
  • season with salt, freshly ground black pepper and a pinch of ground paprika

Perfect snack, that won`t cause you any remorse at all. Everybody agreeing? And if you have the time to prepare this creamy, but quite spicy, aioli, this will the absolute icing on the cake. Happy snacking to all of you!
